I have spend several hours to know this basic issue:
GeneralSync creates on both devices new addressbook (or calendar), which are empty. And GeneralSync synchronise these new instances of addressbook (or calendar). If you creates new address (or event) in previous addressbook (or calendar), nothing will be synchronized. The solution is: copy or move all entries from previous addressbook (or calendar) to new one on both devices and previous addressbook (or calendar) disable (or remove). In this case you have only one instance of addressbook (or calendar) active on both devices and these ones will be synchronized.

If you have any idea on how to make that more clear in the user interface or documentation, I'd welcome some suggestions: where did you expect that information to be?
The current user interface tries to suggest that fact in various places, most prominently during the first run setup: users need to explicitly confirm the creation of a new address book and calendar there – on Android, it will even directly suggest importing.
Sadly, an import option is not possible during the first run setup on PC, as Outlook / Thunderbird is not guaranteed to be loaded at that time. I've been thinking about an application-specific second part of the setup process the first time the user starts Thunderbird / Outlook after the installations, but there are no concrete plans to implement that yet.
I am old man, and I was working in IT many years before. In those days, documentation start with chapter "overview". In this chapter was explanation, how software works and how is build. After this chapter follows today’s user guide. In these days instead overview is product advertising.
I have still question, if I can synchronize existing addressbook or calendar and may this assumption led me off the right track.
But that’s me, and I probably won't change anymore.

GeneralSync can only sync its own calendars and address books. They contain additional metadata that is needed to reliably sync your content, which cannot get stored in a regular calendar or address book.
There is also a conceptional reason (which might be a good thing to include into the overview article you suggested): the intended user experience is having the same calendar on all devices, not syncing existing, different calendars with each other. When establishing a sync relation, GeneralSync doesn't create a new calendar and syncs that – it adds the already existing calendar of the other device. Syncing is just what GeneralSync does behind the scenes to get that to happen.
But that does not mean that you cannot sync existing data: GeneralSync has a dedicated import feature on Android (in the content detail view) and both Thunderbird and Outlook support copying or moving data from existing calendars and address books.
